WILD BOAR WITH CHESTNUTS
1kg Wild boar haunch,loin or saddle, boned and rolled.
400gr roast potatoes
2 onions .
2 carrots.
5 bay leaves
500ml red wine [Greek Wine Xinomavro.]
30 ml white wine vinegar .
salt and freshly ground black pepper .
400gr chestnuts,shells removed.
3 garlic clovers .
3 sprigs of rosemary .
150ml olive oil.
cook the meat in the oven for 1 . 1/2 h 180 C [marinade over the meat 2days ,wine ,olive oil,
vinegar and rosemary.]
